A couple weeks ago I shared one of my new favorite salads. Well, this week I’m sharing another one with you. In fact, this is one I’ve had before, but was reintroduced to it while in the hospital. Yep, you read that right the hospital. Once I was able to eat again, I was on a limited diet (and still am). But this was one thing on there I absolutely loved. Short of having wilted spinach, it’s pretty hard to mess this one up!
I love this salad for several reasons. Not only is this salad super, duper easy to make its also super good for you!! The spinach contains iron that we all need and it’s high in fiber too! Another reason I love it is because of its versatility. The topping and dressing options can be changed and interchanged to mix it up just enough so it doesn’t get “old” or “mundane.” And thirdly…it’s a great, easy snack since its so quickly put together! So, here it is – the simple Spinach Salad recipe.

The rest is simple – Add spinach, fruit choice and dressing to your bowl, toss and ENJOY!!!! You can’t get much easier than that!
My kids are not so much into the salads just yet. So, if your family is like ours and doesn’t consume much salad at one time, you can easily make up the homemade dressings ahead of time and just throw the salad together at the last minute. Pick your toppings and pour over your choice of dressing!YUM!!!!
This is also a salad so easy that you can make it for any size gathering! Now that’s my kind of recipe!!!
