Baking Bits: Mozzarella, Tomato, Avocado Salad

I know what you’re thinking…this doesn’t sound all that tasty. But, OH…it is!!!!  After all my hospital stays and tests, we finally have an official diagnosis (more on that in a later post), which has led us (me) to a new way of eating. Not to mention the fact that I’m now counting calories in an effort to loose the rest of this “baby” weight from child #1 – who may or may not have turned 7 last month. But let’s not go there shall we?!

So…with that said, I’m eating leaner and more “clean” foods. And when this salad came across my Pinterest feed (shocker there I know), I literally fell in love! I mean, it has 3 of my favorite ingredients: cheese (any kind will do), tomatoes and avocadoes!! I couldn’t wait to try it. And you know what? It didn’t disappoint.

And since I’m counting calories, I even took the time to look every single ingredient up and count up the calories. I’ll include that info at the bottom!!

Mozzarella, Tomato and Avocado Salad

Based on recipe at Everything Fabulous

Ingredients:

1 pint cherry/grape tomatoes, cut in half

2-3 medium Avocados, peeled and diced

8oz Mozzarella cheese diced (or fresh Mozzarella pearls, drained)

1/3 cup fresh basil, julienned (or 16 tsp dried)

2 TBSP fresh parsley (or 2 tsp dried)

1/4 cup lemon juice

1/4 cup olive oil

salt & pepper to taste

1. In a large bowl, combine the tomatoes, mozzarella, basil and parsley. Set aside.

2. In a small bowl, whisk the lemon juice, olive oil, salt and pepper. Pour over tomato mixture. Toss to coat. Cover and refrigerate for at least 1 hour before serving.

3. Just before serving, stir in the diced avocados.

Serve as a side salad or with toasty baguettes for a bruschetta-type feel.

Makes approx. 4 cups

Total Calorie count: 1940 (based on 3 avocados)

1/2 cup serving = 243 calories

This salad has a tangy feel because of the lemon juice, but it really seems to work with everything else mixed in. I found it just perfect and extremely filling. I paired it with a grilled chicken breast for a very delicious and full lunch.

Based on 4oz chicken breast
