This new journey of Gluten-Free cooking was so scary at first. But to be quite honest, now I’m having so much fun!!! I’m learning how to adjust old recipes (more of those coming in November!!!) and finding new favorites!

If you’ve read this blog for any length of time, you have probably figured out that I love my slow cooker. Especially on busy homeschool days – the slow cooker saves me everytime!!

Last week I tweaked an old recipe I had in the binder. Since I’m still relatively new to this cooking thing (I only started seriously cooking about 3 years ago) I get a little nervous when I tweak something without the Hubster’s approval. But, this went over with flying colors!! It was even a hit with Mister Bull, which is no easy task believe me!

Slow Cooker Gluten-Free Garlic Chicken

Adapted from this recipe at

What you’ll need:

4-5 Chicken Breasts

4 TBSP Brown Sugar

2 tsp Garlic Powder

½ tsp Garlic Salt

Brown Sugar

3 tsp Olive Oil

Pour Olive Oil in bottom of slow cooker. Lay chicken breasts in crock pot. Sprinkle brown sugar, garlic powder and garlic salt over the top of chicken breasts. Cover and cook on low for 6 hours or high for 4 hours.

We coupled this with the easy Slow Cooker Gluten-Free Italian Red Potatoes and some green beans. It was so moist and full of flavor!! The Hubster raved over it and couldn’t wait for the leftovers!!

This would also be great with brown rice or baked sweet potatoes and a nice salad. Hmmmm…I think I need to add this to my menu next week!
